2009 is all about family and food for me. I am resolving to spend MORE time cooking and with the kids and LESS time where everybody is doing their own thing separately.
Starting with Pizza and Movie Night (every Friday night in our house) we rent a movie the whole family can enjoy and make our own pizzas. Why wait for the pizza delivery guy when you can have hot fresh tasty pizza from your own oven in minutes! The beauty of this recipe is its simplicity. Very few ingredients make a GREAT tasting pizza. Of course feel free to add your favorite toppings to customize your own perfect pie!
BBQ Chicken Pizza
Dough for 1 (15-inch) pizza. This recipe can be doubled.
1 cup warm water (105 to 115 degrees F)
1 (1/4-ounce) envelope active dry yeast
1 teaspoon honey
2 tablespoons extra-virgin olive oil
3 cups unbleached all-purpose flour
1 teaspoon salt
Yellow cornmeal, for sprinkling the baking sheet
In a large bowl, combine the water, yeast, honey, and 1 tablespoon of the olive oil, stirring to combine. Let sit until the mixture is foamy, about 5 minutes.
Add 1 1/2 cups of the flour and the salt, mixing with a dough hook until it is all incorporated and the mixture is smooth. (If you don’t have a mixer you can do it by hand too, its great exercise!) Continue adding the flour, 1/4 cup at a time, working the dough after each addition, until the dough is smooth but still slightly sticky. You might not need all of the flour. Turn the dough out onto a lightly floured surface and knead until the dough is smooth but still slightly tacky, 3 to 5 minutes.
Oil a large mixing bowl with remaining olive oil. Place the dough in the bowl, turning to coat with the oil. Cover with plastic wrap and set in a warm place, free from drafts until doubled in size, about 1 hour.
For the Topping:
½ cup of your favorite BBQ Sauce (I use KC Masterpiece Hickory Flavor)
2 cups grated mozzarella cheese
2 cups cubed roasted chicken breast (about 1 ½ breasts)
Directions:
Roll, toss or stretch the dough to shape. Brush on BBQ sauce (not too much just enough to coat) then add chicken pieces and finally cover with cheese.
Place pizza in 525 degree oven for 10 -15 minutes and enjoy. Yes it’s that easy!
