Sometimes you need to feed the family on a budget! I have refined my chili recipe down to 6 ingredients including a home made Chili Seasoning mix that will knock your socks off.
Ingredients:
1/3 cup diced sweet onion
2 tablespoons olive oil
1 teaspoon minced garlic
2 cans of beans (pinto, black, kidney, you pick your favorites!)
2 tablespoons Chili Seasoning Mix (recipe below)
4 tablespoons tomato paste
Chili Seasoning Mix
1 tablespoon all-purpose flour
4 teaspoons chili powder
1 tablespoon crushed red pepper
1 tablespoon dried minced onion
1 tablespoon dried, minced garlic
2 teaspoons white sugar
2 teaspoons ground cumin
2 teaspoons dried parsley
1 teaspoon dried basil
1/4 teaspoon ground black pepper
Directions
In a bowl, stir together flour, chili powder, red pepper, onion, garlic, sugar, cumin, parsley, basil and pepper and set aside. (store in an airtight container for later use).
Heat Olive Oil in a pot over medium heat; add onion and garlic and sauté for 3-4 minutes. Add beans, 1/3 cup of water, tomato paste and 2 Tablespoons of Chili Seasoning. Simmer 5-8 minutes.
Serve with your favorite topping and crackers, Enjoy!
