This twist on a classic dish is easy to prepare and tastes great!
About this time every year peach trees are bursting with fresh fruit, this is a fast and easy way to enjoy fresh peaches. You will need only two bowls and about an hour to prepare this great tasting dessert!
Ingredients:
Filling:
4 cups fresh peeled and sliced peaches
2/3 cup of sugar
1- Tablespoon cornstarch
1/8 cup water
Topping:
½ stick butter
½ cup brown sugar
¼ cup sugar
½ cup oatmeal
½ cup all purpose flour
1-teaspoon cinnamon
In a saucepan combine the sugar, cornstarch and water. Stir over low heat to combine then add peaches. Simmer over low heat until thickened and bubbly (about 5 minutes) Keep warm and set aside.
Place the topping ingredients in a bowl or food processor and blend until the texture of course meal.
Pour the peaches into an 8X8X2 baking dish and spread on the topping. Bake in a 350 oven for 20-30 minutes until bubbly and hot. Remove from oven let cool and serve with a big scoop of ice cream!
